Ingredients

  • 1/2 cup chocolate chips


Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
  3. Add the grated zucchini, egg, and vanilla extract to the mixture and stir until well combined.
  4. In another bowl, whisk together the flour, baking powder, baking soda, cinnamon, and salt.
  5. Gradually add the dry ingredients to the wet mixture, stirring until just combined. Fold in the chocolate chips.
  6. Drop rounded tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  7. Bake for 10-12 minutes, or until the edges are lightly golden brown.
  8. Remove from the oven and let cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
