- 8 ounces pasta of your choice
- 1 cup ricotta cheese
- 2 cups fresh spinach
- 4 slices turkey bacon
- 1 lemon, zested and juiced
- 2 tablespoons olive oil
- 1 teaspoon garlic, minced
- Salt and pepper to taste
Instructions
- Cook the pasta according to package instructions. Drain and set aside.
- In a pan, cook the turkey bacon until crispy. Remove and crumble.
- Add olive oil and minced garlic to the pan. Sauté for 1-2 minutes.
- Add spinach and cook until wilted.
- Stir in ricotta cheese, lemon zest, lemon juice, and crumbled bacon. Mix well.
- Add the cooked pasta and toss to coat.
- Season with salt and pepper to taste. Serve warm.
