- 1 lemon, zested and juiced

Instructions
- Cook the spaghetti according to package instructions until al dente.
- In a large bowl, combine the ricotta, lemon zest, lemon juice, garlic, and olive oil.
- Once the pasta is cooked, drain and add it to the bowl with the ricotta mixture.
- Add the fresh spinach, salt, and pepper. Toss everything together until well combined.
- Serve topped with grated Parmesan cheese.
