Description

These crispy yellow squash tots are a healthy twist on tater tots. Cheesy, golden, and perfect for dipping, they’re a family favorite snack or side.

Ingredients

Scale
  • 1 egg
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 2 cups grated yellow squash (about 2 medium)
  • 1/2 teaspoon salt
  • 1/3 cup breadcrumbs (regular or panko)
  • 1/2 cup shredded cheddar cheese
  • Salt & pepper, to taste
  • Optional: 1 tablespoon grated Parmesan or chopped herbs (like parsley)

Instructions

  1. Grate the yellow squash, sprinkle with salt, and let sit for 10–15 minutes. Squeeze out excess moisture.
  2. Mix drained squash with egg, breadcrumbs, cheese, and seasonings until combined.
  3. Shape into small cylinders using about 1 tablespoon of mixture per tot.
  4. Oven: Bake at 400°F (200°C) for 20–25 minutes, flipping halfway. Air Fryer: Cook at 375°F (190°C) for 10–12 minutes, shaking halfway.

Notes

  • Drain squash thoroughly to avoid soggy tots.
  • Add chopped jalapeños or herbs for extra flavor.
  • Freeze uncooked tots for easy meal prep.
