Description

This White Lasagna Soup with Chicken and Spinach is a creamy, comforting dish that’s perfect for family dinners.


Ingredients

  • 1 tablespoon olive oil
  • 1 pound chicken breast, diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 teaspoon Italian seasoning
  • 1 cup heavy cream
  • 2 cups fresh spinach
  • 9 lasagna noodles, broken into pieces
  • 1 cup ricotta cheese
  • 1 cup mozzarella cheese, shredded
  • 1/2 cup grated Parmesan cheese


Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add diced chicken and cook until browned.
  3. Add onion and garlic, sauté until fragrant.
  4. Pour in chicken broth and add Italian seasoning.
  5. Stir in broken lasagna noodles and cook until tender.
  6. Lower heat and mix in heavy cream and spinach.
  7. Remove from heat and stir in ricotta, mozzarella, and Parmesan cheeses.
  8. Serve hot and enjoy!

Notes

  • For a vegetarian version, replace the chicken with mushrooms.
