- 1 tablespoon olive oil
- 1 pound chicken breast, diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 teaspoon Italian seasoning
- 1 cup heavy cream
- 2 cups fresh spinach
- 9 lasagna noodles, broken into pieces
- 1 cup ricotta cheese
- 1 cup mozzarella cheese, shredded
- 1/2 cup grated Parmesan cheese
Instructions
- Heat olive oil in a large pot over medium heat.
- Add diced chicken and cook until browned.
- Add onion and garlic, sauté until fragrant.
- Pour in chicken broth and add Italian seasoning.
- Stir in broken lasagna noodles and cook until tender.
- Lower heat and mix in heavy cream and spinach.
- Remove from heat and stir in ricotta, mozzarella, and Parmesan cheeses.
- Serve hot and enjoy!
Notes
- For a vegetarian version, replace the chicken with mushrooms.
