Description

This Vegan Tofu Katsu Curry is a delicious and comforting dish that combines crispy tofu with a rich, flavorful curry sauce.


Ingredients

Scale
  • 1 block firm tofu
  • 1 cup panko breadcrumbs
  • 1 cup all-purpose flour
  • 1 cup plant milk
  • 2 tablespoons soy sauce
  • 2 tablespoons curry powder
  • 1 tablespoon vegetable oil
  • 1 onion chopped
  • 2 carrots sliced
  • 2 cups vegetable broth
  • 1 tablespoon cornstarch
  • Salt to taste


Instructions

  1. Press the tofu to remove excess moisture, then cut into slices.
  2. In one bowl, place the flour; in another, the plant milk mixed with soy sauce; and in the third, the panko breadcrumbs.
  3. Dredge each tofu slice in flour, then dip in the plant milk mixture, and coat with panko breadcrumbs.
  4. Heat vegetable oil in a pan and fry the tofu slices until golden brown on both sides.
  5. In another pot, sauté onions and carrots until soft, then add curry powder and stir.
  6. Add vegetable broth and simmer for about 10 minutes.
  7. Mix cornstarch with a bit of water and add to the pot to thicken the curry.
  8. Serve the crispy tofu over rice with the curry sauce poured on top.

Notes

  • For extra crunch, double bread the tofu.
  • Feel free to add other vegetables to the curry.
