This Vegan Tofu Katsu Curry is a delicious and comforting dish that combines crispy tofu with a rich, flavorful curry sauce.

- 1 block firm tofu
- 1 cup panko breadcrumbs
- 1 cup all-purpose flour
- 1 cup plant milk
- 2 tablespoons soy sauce
- 2 tablespoons curry powder
- 1 tablespoon vegetable oil
- 1 onion chopped
- 2 carrots sliced
- 2 cups vegetable broth
- 1 tablespoon cornstarch
- Salt to taste
Instructions
- Press the tofu to remove excess moisture, then cut into slices.
- In one bowl, place the flour; in another, the plant milk mixed with soy sauce; and in the third, the panko breadcrumbs.
- Dredge each tofu slice in flour, then dip in the plant milk mixture, and coat with panko breadcrumbs.
- Heat vegetable oil in a pan and fry the tofu slices until golden brown on both sides.
- In another pot, sauté onions and carrots until soft, then add curry powder and stir.
- Add vegetable broth and simmer for about 10 minutes.
- Mix cornstarch with a bit of water and add to the pot to thicken the curry.
- Serve the crispy tofu over rice with the curry sauce poured on top.
Notes
- For extra crunch, double bread the tofu.
- Feel free to add other vegetables to the curry.
