Ingredients

  • 4 slices turkey bacon, chopped
  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 4 cups vegetable broth
  • 2 cans white beans, drained and rinsed
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 2 cups spinach
  • Salt and pepper to taste


Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the turkey bacon and cook until crispy.
  2. Add the onion, carrots, and celery. Cook until the vegetables are softened.
  3. Stir in the garlic and cook for an additional minute.
  4. Add the vegetable broth, white beans, thyme, and rosemary. Bring to a simmer.
  5. Simmer for 15-20 minutes, allowing the flavors to meld.
  6. Stir in the spinach and cook until wilted. Season with salt and pepper to taste.
