- 4 slices turkey bacon, chopped
- 1 onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 4 cups vegetable broth
- 2 cans white beans, drained and rinsed
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 2 cups spinach
- Salt and pepper to taste
Instructions
- In a large pot, heat the olive oil over medium heat. Add the turkey bacon and cook until crispy.
- Add the onion, carrots, and celery. Cook until the vegetables are softened.
- Stir in the garlic and cook for an additional minute.
- Add the vegetable broth, white beans, thyme, and rosemary. Bring to a simmer.
- Simmer for 15-20 minutes, allowing the flavors to meld.
- Stir in the spinach and cook until wilted. Season with salt and pepper to taste.
