Ingredients

  • 1 ½ cups chocolate cookie crumbs
  • ½ cup unsalted butter, melted
  • 2 cups cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 cup sour cream
  • 1 cup heavy cream
  • 8 ounces dark chocolate, melted
  • 8 ounces milk chocolate, melted
  • 1 teaspoon vanilla extract
  • 3 tablespoons cocoa powder


Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a bowl, mix chocolate cookie crumbs and melted butter until combined. Press into the bottom of a springform pan.
  3. In a large bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, mixing well after each addition.
  4. Stir in sour cream, heavy cream, melted dark chocolate, vanilla extract, and cocoa powder until fully incorporated.
  5. Pour the cheesecake batter over the crust, smoothing the top.
  6. Bake for 60 minutes or until the edges are set and the center slightly jiggles.
  7. Turn off the oven and let the cheesecake cool inside for 1 hour.
  8. Remove from the oven and refrigerate for at least 4 hours before serving.
