Ingredients

  • 3 pounds beef roast
  • 2 tablespoons fresh rosemary, chopped
  • 4 cloves garlic, minced
  • 1 tablespoon salt
  • 1 teaspoon black pepper
  • 1 cup beef broth
  • 2 tablespoons olive oil
  • 1 large onion, sliced
  • 3 carrots, chopped
  • 2 stalks celery, chopped


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a small bowl, mix together rosemary, garlic, salt, and black pepper. Rub this mixture all over the beef roast.
  3. In a large oven-safe pot, heat olive oil over medium heat. Sear the beef roast on all sides until browned.
  4. Add the onions, carrots, and celery to the pot. Pour in the beef broth.
  5. Cover the pot and place it in the preheated oven. Roast for about 2 to 3 hours, or until the meat is tender.
  6. Remove the pot from the oven and let the roast rest for 10 minutes before slicing.
