- 1 cup beef broth

- 3 carrots, chopped
- 2 stalks celery, chopped
Instructions
- Preheat the oven to 350°F (175°C).
- In a small bowl, mix together rosemary, garlic, salt, and black pepper. Rub this mixture all over the beef roast.
- In a large oven-safe pot, heat olive oil over medium heat. Sear the beef roast on all sides until browned.
- Add the onions, carrots, and celery to the pot. Pour in the beef broth.
- Cover the pot and place it in the preheated oven. Roast for about 2 to 3 hours, or until the meat is tender.
- Remove the pot from the oven and let the roast rest for 10 minutes before slicing.
