- 2 cloves garlic, minced
- 1 can (14.5 ounces) diced tomatoes
- 1 cup fresh basil leaves, chopped
- 1 cup light ricotta cheese
- Salt to taste
- Black pepper to taste
Instructions
- Cook the pasta according to package instructions. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant.
- Add the diced tomatoes (with their juices) and bring to a simmer. Cook for about 5 minutes.
- Stir in the chopped basil and ricotta cheese until well combined. Season with salt and pepper.
- Add the cooked pasta to the skillet and toss to coat in the sauce.
- Serve warm, garnished with additional basil if desired.
