- 4 cups chicken broth

- 1 cup mushrooms, sliced
- 1–2 tbsp fish sauce
- 1 tbsp lime juice
- 2 tsp sugar
- 2–3 Thai chilies, sliced
- Fresh cilantro, for garnish
Instructions
- Sauté garlic, ginger, and lemongrass in coconut oil until aromatic.
- Add chicken broth and coconut milk; simmer gently.
- Add chicken slices and cook until tender.
- Stir in mushrooms; cook for 5 minutes.
- Season with fish sauce, lime juice, sugar, and chilies; adjust taste.
- Garnish with cilantro and serve hot with lime wedges.
Notes
- Substitute galangal with ginger if unavailable.
- Adjust chilies for your preferred spice level.
