Ingredients

2 cups fresh pineapple, diced 
- 
1 large cucumber, sliced or diced 
- 
¼ cup red onion, thinly sliced 
- 
2 tablespoons fresh cilantro, chopped 
- 
1 tablespoon fresh lime juice 
- 
1 teaspoon honey or agave (optional) 
- 
⅛ teaspoon chili flakes or Tajín (optional) 
- 
Salt and pepper, to taste 
Instructions
- 
Dice the pineapple, slice or dice the cucumber, and thinly slice the red onion. 
- 
In a small bowl, whisk together lime juice, honey, salt, pepper, and chili flakes. 
- 
In a large mixing bowl, combine pineapple, cucumber, and red onion. 
- 
Pour the dressing over and toss gently. 
- 
Garnish with chopped cilantro. Chill for at least 15 minutes before serving. 
Notes
- 
Substitute mint for cilantro for a different twist. 
- 
Add diced jalapeño for extra heat. 
- 
For best texture, toss the salad just before serving.
