- 8 slices turkey bacon
Instructions
- In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
- In another bowl, beat the eggs and then mix in the buttermilk, melted butter, and vanilla extract.
- Add the wet ingredients to the dry ingredients and stir until just combined; do not overmix.
- Preheat a non-stick skillet over medium heat and grease lightly.
- Pour 1/4 cup of batter onto the skillet for each pancake.
- Cook until bubbles form on the surface, then flip and cook until golden brown.
- While pancakes are cooking, cook the turkey bacon in another skillet until crispy.
- Serve pancakes warm, topped with turkey bacon.
