Description

This slow cooker Corned Beef & Cabbage recipe is a set-it-and-forget-it meal packed with rich, savory flavors. The brisket turns fork-tender, the vegetables soak up all the delicious juices, and the final dish is hearty, comforting, and perfect for family dinners or St. Patrick’s Day celebrations.

Ingredients

Scale
  • 4 cups beef broth or water
  • 1 tbsp apple cider vinegar
  • 1 tbsp Worcestershire sauce
  • 34 lbs beef brisket (with seasoning packet)
  • 2 tbsp brown sugar
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp mustard seeds (optional)
  • 1 bay leaf
  • 4 medium potatoes, quartered
  • 3 large carrots, cut into chunks
  • 1 onion, cut into wedges
  • 1 small head cabbage, cut into wedges

Instructions

1. Prepare the Slow Cooker:

  • Layer potatoes, carrots, and onion at the bottom of the slow cooker.

2. Season the Brisket:

  • Rinse the brisket under cold water to remove excess brine.
  • Place it fat-side up on top of the vegetables.
  • Sprinkle with the seasoning packet, brown sugar, garlic powder, black pepper, mustard seeds, and bay leaf.

3. Add the Liquid:

  • Pour in beef broth (or water), apple cider vinegar, and Worcestershire sauce.

4. Cook:

  • Cover and cook on LOW for 8-10 hours or HIGH for 4-5 hours until the brisket is tender.

5. Add the Cabbage:

  • Place cabbage wedges on top 1 hour before the cooking time ends.

6. Serve:

  • Remove the brisket and let it rest for 10 minutes. Slice against the grain.
  • Serve with the cooked vegetables and spoon some cooking juices over the top.

Notes

  • For extra flavor, substitute half the broth with beer (Guinness works well).
  • To reduce saltiness, rinse the corned beef before cooking.
  • Cutting against the grain ensures tender slices.
