Instructions

  1. In a large pot, heat the vegetable oil over medium heat. Add the onion, garlic, and ginger; sauté until fragrant.
  2. Add the sliced chicken and cook until browned.
  3. Pour in the chicken broth and bring to a simmer.
  4. Stir in the coconut milk and red curry paste. Cook for 10 minutes.
  5. Add the rice noodles and spinach, cooking until the noodles are tender.
