- 8 ounces rice noodles
- 2 cups spinach
- 1 tablespoon fish sauce
- 1 lime, juiced

Instructions
- In a large pot, heat the vegetable oil over medium heat. Add the onion, garlic, and ginger; sauté until fragrant.
- Add the sliced chicken and cook until browned.
- Pour in the chicken broth and bring to a simmer.
- Stir in the coconut milk and red curry paste. Cook for 10 minutes.
- Add the rice noodles and spinach, cooking until the noodles are tender.
- Season with fish sauce and lime juice before serving.

- For a spicier soup, add more red curry paste.
