Teriyaki Beef & Pineapple Rice Bowl Recipe

Description

A quick and easy weeknight dinner with seared beef, pineapple, and a sticky homemade teriyaki glaze served over rice. Sweet, savory, and totally satisfying.


Ingredients

  • 1 lb flank steak or sirloin, thinly sliced
  • 1/3 cup low-sodium soy sauce
  • 1/4 cup honey or brown sugar
  • 2 tbsp rice vinegar
  • 1 garlic clove, minced
  • 1 tsp fresh grated ginger
  • 1 tbsp oil (vegetable or sesame)
  • Salt & black pepper to taste
  • 1 tbsp cornstarch + 2 tbsp water (slurry)
  • 2 cups cooked jasmine or white rice
  • 1 cup pineapple chunks (fresh or canned)
  • 1/2 cup shredded carrots (optional)
  • 1/4 cup chopped green onions
  • 1 tbsp sesame seeds

Instructions

  1. Cook the rice according to package instructions. Keep warm.
  2. Heat oil in a skillet or wok over medium-high heat. Sear the beef 2–3 minutes per side, then remove from skillet.
  3. In the same skillet, combine soy sauce, honey, vinegar, garlic, and ginger. Bring to a simmer.
  4. Add the cornstarch slurry. Stir and cook until thickened, about 1–2 minutes.
  5. Return the beef to the skillet, add pineapple chunks, and stir to coat. Heat through for 2 minutes.
  6. Assemble bowls: rice first, then beef and pineapple. Garnish with carrots, green onions, and sesame seeds.

  • Use tofu or chicken for a protein swap.
  • For extra spice, add sriracha or chili flakes to the sauce.
