Instructions
- Combine tequila, lime juice, garlic, spices, and olive oil in a bowl or bag.
- Add chicken and marinate for 30 minutes to 2 hours.
- Grill or sear chicken for 5–7 minutes per side until cooked through.
- Let rest for 5 minutes, then slice the chicken.
- Divide rice into bowls and layer with chicken, beans, corn, tomato, lettuce, avocado, and cilantro.
- Top with lime wedges and optional toppings like sour cream and cheese.
