Ingredients

  • 2 pounds beef chuck, cut into cubes
  • 2 tablespoons vegetable oil
  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 2 tablespoons curry powder
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • 1/2 teaspoon turmeric
  • 1 can (14 oz) diced tomatoes
  • 1 cup beef broth
  • 1 tablespoon brown sugar
  • 1/4 cup fresh cilantro, chopped
  • 4 naan breads
  • 4 tablespoons butter, melted
  • 4 cloves garlic, minced for naan


Instructions

  1. Heat the vegetable oil in a large pot over medium heat.
  2. Add the onions and sauté until translucent.
  3. Stir in the garlic and ginger, cooking for another minute.
  4. Add the beef cubes and brown on all sides.
  5. Sprinkle in the spices and stir until fragrant.
  6. Pour in the diced tomatoes and beef broth, followed by the brown sugar.
  7. Bring to a simmer, then cover and cook on low heat for 2 hours, until the beef is tender.
  8. For the naan, mix garlic with melted butter and brush it over each naan.
  9. Serve the curry with warm naan, garnished with fresh cilantro.
