- 1 cup apple cider vinegar

- 1/2 teaspoon black pepper
- 1 teaspoon cumin
Instructions
- In a large bowl, combine the corn, jalapeños, red bell pepper, and onion.
- In a saucepan, combine the vinegar, sugar, salt, pepper, and cumin. Bring to a boil, stirring until the sugar dissolves.
- Pour the hot vinegar mixture over the corn mixture and stir well.
- Transfer the mixture to sterilized jars and seal them properly.
- Allow the relish to cool to room temperature, then refrigerate for at least 24 hours to let the flavors meld.
