Ingredients

  • 1 cup panko breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 4 boneless chicken breasts or pork cutlets, pounded to even thickness
  • 1 cup all-purpose flour
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper, to taste
  • Cooking spray or olive oil

Instructions

  1. Preheat oven to 425°F (220°C) and prepare a baking sheet with parchment or a wire rack.
  2. Place flour in one shallow bowl. Beat eggs in a second bowl.
  3. In a third bowl, mix panko, Parmesan, garlic powder, paprika, salt, and pepper.
  4. Coat each cutlet in flour, dip into egg, then press into breadcrumb mixture until well coated.
  5. Place on baking sheet or rack. Lightly spray or drizzle with oil.
  6. Bake for 20–25 minutes, flipping halfway, until golden and cooked through (165°F/74°C for chicken).
