Description

Ingredients

  • 1 pint strawberries, hulled and sliced
  • 1/2 cup crumbled feta or goat cheese
  • 1/3 cup sliced almonds or pecans, toasted
  • 1/4 small red onion, thinly sliced (optional)
  • 1/4 cup olive oil
  • 2 tbsp balsamic vinegar
  • 1 tbsp honey or maple syrup
  • 1 tsp Dijon mustard
  • Salt and pepper, to taste

Instructions

  1. In a large bowl, combine spinach, strawberries, cheese, toasted nuts, and red onion if using.
  2. In a separate bowl or jar, whisk olive oil, balsamic vinegar, honey, Dijon mustard, salt, and pepper until well blended.
