Description

A refreshing and easy summer dish that combines spaghetti and turkey bacon with fresh vegetables.


Ingredients

  • 8 ounces spaghetti
  • 4 slices turkey bacon
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup red onion, diced
  • 1/4 cup fresh basil, chopped
  • 1/4 cup olive oil
  • 2 tablespoons balsamic vinegar
  • Salt and pepper to taste


Instructions

  1. Cook the spaghetti according to package instructions. Drain and cool.
  2. In a skillet, cook turkey bacon until crispy. Remove and chop.
  3. In a large bowl, combine spaghetti, cherry tomatoes, cucumber, red onion, basil, and turkey bacon.
  4. In a small bowl, whisk together olive oil, balsamic vinegar, salt, and pepper. Pour over the spaghetti mixture and toss to coat.
  5. Serve chilled or at room temperature.
