- 2 large sweet potatoes
- 1 tbsp olive oil
- Salt and pepper to taste
- 3 cups fresh spinach (washed, roughly chopped)
- 2 cloves garlic (minced)
- 1/2 cup crumbled feta cheese
- 1/4 cup chopped red onion (optional)
- 1/4 tsp red pepper flakes (optional)
- Fresh lemon juice (optional)
Instructions
- Preheat oven to 400°F (200°C). Pierce sweet potatoes with a fork and roast for 45–60 minutes until tender.
- Heat olive oil in a skillet. Sauté garlic for 1 minute. Add spinach and red onion (if using) and cook until wilted. Season with salt, pepper, and red pepper flakes.
- Slice roasted sweet potatoes open lengthwise. Fluff insides with a fork.
- Stuff each sweet potato with spinach mixture and sprinkle feta on top. Drizzle with lemon juice if desired. Serve warm.
Notes
- For a vegan version, substitute tofu feta.
- Add toasted nuts for crunch.
