Ingredients

  • 2 fillets salmon
  • 4 slices turkey bacon
  • 2 cups fresh spinach
  • 1/2 cup cream cheese
  • 1/4 cup grated parmesan cheese
  • 1 clove garlic, minced
  • 1 teaspoon lemon juice
  • Salt to taste
  • Pepper to taste


Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cook the turkey bacon until crispy, then chop it into small pieces.
  3. In a skillet, sauté the garlic in a bit of olive oil, then add the spinach and cook until wilted.
  4. In a bowl, mix together the cream cheese, parmesan, cooked spinach, turkey bacon, lemon juice, salt, and pepper.
  5. Cut a pocket in each salmon fillet and stuff it with the spinach mixture.
  6. Place the stuffed salmon in a baking dish and bake for 20-25 minutes, or until the salmon is cooked through.
