- 2 fillets salmon
- 4 slices turkey bacon
- 2 cups fresh spinach
- 1/2 cup cream cheese
- 1/4 cup grated parmesan cheese
- 1 clove garlic, minced
- 1 teaspoon lemon juice

Instructions
- Preheat the oven to 375°F (190°C).
- Cook the turkey bacon until crispy, then chop it into small pieces.
- In a skillet, sauté the garlic in a bit of olive oil, then add the spinach and cook until wilted.
- In a bowl, mix together the cream cheese, parmesan, cooked spinach, turkey bacon, lemon juice, salt, and pepper.
- Cut a pocket in each salmon fillet and stuff it with the spinach mixture.
- Place the stuffed salmon in a baking dish and bake for 20-25 minutes, or until the salmon is cooked through.
