Description

Ingredients

  • 1 pound ground turkey
  • 4 bell peppers, diced
  • 1 cup onion, chopped
  • 2 cloves garlic, minced
  • 1 cup rice, uncooked
  • 2 cups chicken broth
  • 1 can diced tomatoes
  • 1 tablespoon Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup shredded cheese
  • 4 slices turkey bacon, cooked and crumbled


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large skillet, cook the ground turkey over medium heat until brown.
  3. Add the diced bell peppers, onion, and garlic; cook until the vegetables are soft.
  4. Stir in the rice, chicken broth, diced tomatoes, Italian seasoning, salt, and pepper.
  5. Bring the mixture to a boil, then reduce heat and simmer for 20 minutes.
  6. Transfer the mixture to a baking dish and top with shredded cheese and crumbled turkey bacon.
  7. Bake for 20-25 minutes until cheese is melted and bubbly.
