- 1 pound ground turkey
- 4 bell peppers, diced
- 1 cup onion, chopped
- 2 cloves garlic, minced
- 1 cup rice, uncooked
- 2 cups chicken broth
- 1 can diced tomatoes
- 1 tablespoon Italian seasoning
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup shredded cheese
- 4 slices turkey bacon, cooked and crumbled
Instructions
- Preheat the oven to 350°F (175°C).
- In a large skillet, cook the ground turkey over medium heat until brown.
- Add the diced bell peppers, onion, and garlic; cook until the vegetables are soft.
- Stir in the rice, chicken broth, diced tomatoes, Italian seasoning, salt, and pepper.
- Bring the mixture to a boil, then reduce heat and simmer for 20 minutes.
- Transfer the mixture to a baking dish and top with shredded cheese and crumbled turkey bacon.
- Bake for 20-25 minutes until cheese is melted and bubbly.
Notes
- For a spicier kick, add jalapeños or crushed red pepper flakes to the mixture.
