- 4 chicken breasts
- 1 cup fresh spinach, chopped
- 1/2 cup cream cheese, softened
- 1/2 cup shredded mozzarella cheese
- 1/4 cup dried cranberries, chopped
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons olive oil
Instructions
- Preheat the oven to 375°F (190°C).
- In a bowl, mix together the spinach, cream cheese, mozzarella, cranberries, garlic powder, onion powder, salt, and pepper.
- Cut a pocket in each chicken breast and stuff with the mixture.
- Heat olive oil in a skillet over medium heat. Sear the stuffed chicken breasts for 3-4 minutes on each side.
- Transfer the chicken to the oven and bake for 25-30 minutes, or until the chicken is cooked through.
- Let the chicken rest before slicing and serving.
