This Strawberries and Cream Dream Layer Cheesecake Cake is a delightful dessert that combines the creamy richness of cheesecake with the fresh sweetness of strawberries, all layered to perfection.

- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- 2 cups cream cheese, softened
- 1 cup confectioners’ sugar
- 2 teaspoons vanilla extract
- 2 cups heavy whipping cream
- 1 cup strawberries, sliced
- ¼ cup strawberry puree
- 2 tablespoons gelatin powder
- 6 tablespoons cold water
Instructions
- Preheat the oven to 350°F (175°C).
- Combine graham cracker crumbs and melted butter in a bowl and press into the bottom of a 9-inch springform pan.
- Bake for 10 minutes and allow to cool.
- In a large mixing bowl, beat the cream cheese until smooth. Gradually add confectioners’ sugar and vanilla extract, mixing until well combined.
- In another bowl, whip the heavy cream until stiff peaks form.
- Carefully fold the whipped cream into the cream cheese mixture until just combined.
- In a small bowl, mix gelatin powder with cold water and allow to bloom for 5 minutes. Then, gently heat until dissolved.
- Fold the dissolved gelatin into the cream cheese mixture.
- Layer half of the cheesecake mixture over the crust, followed by half of the strawberry puree and sliced strawberries. Repeat the layers with the remaining cheesecake mixture and strawberries.
- Chill in the refrigerator for at least 4 hours, or until set.
- Remove from springform pan and serve chilled.
Notes
- For a more intense strawberry flavor, add more strawberry puree between the layers.
- Make sure the cream cheese is completely softened for a smoother texture.
