- 1 tbsp olive oil or butter
- 2 cups fresh spinach, chopped
- 1/2 small onion, diced (optional)
- 6 large eggs
- 1/2 cup milk or heavy cream
- 1/2 cup shredded cheddar cheese
- 1/4 cup crumbled feta cheese (optional)
- Salt and pepper to taste
- Pinch of garlic powder or fresh minced garlic
- Red pepper flakes (optional)
Instructions
- Preheat oven to 375°F (190°C) and grease an 8×8 baking dish or pie plate.
- Sauté onion (if using) in olive oil or butter until softened. Add spinach and cook until wilted. Set aside to cool slightly.
- In a bowl, whisk eggs, milk, salt, pepper, and garlic.
- Stir in sautéed spinach mixture, cheddar, and feta.
- Pour mixture into baking dish and spread evenly.
- Bake for 25–30 minutes until eggs are set and top is golden.
- Let cool for 5 minutes before slicing and serving.

- Use fresh or well-drained frozen spinach.
- Customize with your favorite cheese or added veggies.
