Description

A rich, cheesy egg bake filled with spinach and seasoned to perfection. Great for breakfast, brunch, or meal prep.


Ingredients

  • 1 tbsp olive oil or butter
  • 2 cups fresh spinach, chopped
  • 1/2 small onion, diced (optional)
  • 6 large eggs
  • 1/2 cup milk or heavy cream
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup crumbled feta cheese (optional)
  • Salt and pepper to taste
  • Pinch of garlic powder or fresh minced garlic
  • Red pepper flakes (optional)

Instructions

  1. Preheat oven to 375°F (190°C) and grease an 8×8 baking dish or pie plate.
  2. Sauté onion (if using) in olive oil or butter until softened. Add spinach and cook until wilted. Set aside to cool slightly.
  3. In a bowl, whisk eggs, milk, salt, pepper, and garlic.
  4. Stir in sautéed spinach mixture, cheddar, and feta.
  5. Pour mixture into baking dish and spread evenly.
  6. Bake for 25–30 minutes until eggs are set and top is golden.
  7. Let cool for 5 minutes before slicing and serving.
