Ingredients

  • 4 boneless, skinless chicken breasts
  • 8 ounces cream cheese, softened
  • 2 cups fresh spinach, chopped
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 cup shredded mozzarella cheese
  • 1 teaspoon olive oil
  • Salt to taste
  • Pepper to taste


Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, mix cream cheese, spinach, garlic powder, onion powder, and mozzarella cheese until well combined.
  3. Cut a pocket in each chicken breast and stuff with the spinach mixture.
  4. Season the outside of the chicken with salt and pepper.
  5. Heat olive oil in a skillet over medium-high heat and sear each chicken breast for 3-4 minutes on each side until golden brown.
  6. Transfer the chicken to a baking dish and bake for 25-30 minutes or until cooked through.
