- 1 pound shrimp, peeled and deveined
- 2 avocados, diced
- 1/4 cup red onion, finely chopped
- 1/4 cup cilantro, chopped
- 1 lime, juiced
- 1 teaspoon chili powder
- Salt and pepper to taste
Instructions
- Cook the shrimp in boiling water for about 3-4 minutes until they are pink and opaque.
- In a bowl, combine the diced avocado, red onion, cilantro, lime juice, chili powder, salt, and pepper.
- Once the shrimp are cool, chop them and add them to the avocado mixture.
- Serve in small cups or on a platter.
Notes
- For extra spice, add diced jalapeños to the avocado mixture.
- These can be made ahead of time but serve fresh for the best flavor!
