Instructions

  2. Whisk together flour, baking soda, baking powder, salt, cinnamon, nutmeg, ginger, and cloves.
  3. Cream butter, oil, granulated sugar, and brown sugar until smooth.
  4. Add pumpkin puree, egg, and vanilla extract; mix until fully combined.
  5. Gradually add dry ingredients to wet mixture; mix until just combined.
  6. Chill dough for 15–20 minutes if it’s too soft.
  7. Scoop dough onto baking sheets, roll in sugar if desired, and space 2 inches apart.
