- 1 head garlic, cloves separated and peeled
- 1/2 cup honey
- 1/4 cup soy sauce

Instructions
- Preheat the oven to 325°F (160°C).
- In a large roasting pan, mix garlic, honey, soy sauce, olive oil, black pepper, and salt.
- Add the beef shoulder, turning to coat it well in the mixture.
- Cover the pan tightly with foil and roast for 3-4 hours, until the beef is fork-tender.
- Remove the foil, add rosemary, and cook for an additional 30 minutes to caramelize.
- Let the beef rest before slicing. Serve warm.
