- 3 pounds beef shoulder
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 tablespoon ground cumin
- 4 cloves garlic, minced
- 1 cup beef broth
- 8 large flour tortillas
- 2 cups green chile sauce
- 1 cup shredded cheese
- 1 cup sour cream
Instructions
- Preheat your oven to 275°F (135°C).
- Rub the beef shoulder with olive oil, salt, pepper, cumin, and minced garlic.
- Place the beef in a roasting pan and add beef broth.
- Cover the pan with foil and roast for 4-5 hours, or until tender.
- Remove the beef from the oven and shred it with two forks.
- Warm the tortillas and fill each with shredded beef, green chile sauce, and cheese.
- Roll the tortillas into burritos and top with additional green chile sauce and sour cream.
- Serve hot.

- For extra flavor, marinate the beef overnight.
- Top with chopped cilantro for garnish.
