Description

Ingredients

  • 3 pounds beef shoulder
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 tablespoon ground cumin
  • 4 cloves garlic, minced
  • 1 cup beef broth
  • 8 large flour tortillas
  • 2 cups green chile sauce
  • 1 cup shredded cheese
  • 1 cup sour cream


Instructions

  1. Preheat your oven to 275°F (135°C).
  2. Rub the beef shoulder with olive oil, salt, pepper, cumin, and minced garlic.
  3. Place the beef in a roasting pan and add beef broth.
  4. Cover the pan with foil and roast for 4-5 hours, or until tender.
  5. Remove the beef from the oven and shred it with two forks.
  6. Warm the tortillas and fill each with shredded beef, green chile sauce, and cheese.
  7. Roll the tortillas into burritos and top with additional green chile sauce and sour cream.
  8. Serve hot.
