- 4 boneless, skinless chicken thighs
- 1 cup pineapple chunks
- 1/2 cup brown sugar
- 1/4 cup soy sauce
- 2 cloves garlic, minced
- 1 tablespoon ginger, grated
- 1 tablespoon cornstarch
- 1 tablespoon sesame oil
Instructions
- Place the chicken thighs in the slow cooker.
- In a bowl, mix together the pineapple, brown sugar, soy sauce, garlic, and ginger. Pour over the chicken.
- Cover and cook on low for 4-5 hours or until the chicken is cooked through.
- Once done, remove the chicken and whisk in the cornstarch mixed with 1 tablespoon of water to thicken the sauce.
- Return the chicken to the slow cooker and coat with the sauce.
Notes
- For a spicier kick, add red pepper flakes to the sauce.
- Serve with rice or noodles to soak up the delicious sauce.
