Ingredients

  • 4 boneless, skinless chicken thighs
  • 1 cup pineapple chunks
  • 1/2 cup brown sugar
  • 1/4 cup soy sauce
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 1 tablespoon cornstarch
  • 1 tablespoon sesame oil


Instructions

  1. Place the chicken thighs in the slow cooker.
  2. In a bowl, mix together the pineapple, brown sugar, soy sauce, garlic, and ginger. Pour over the chicken.
  3. Cover and cook on low for 4-5 hours or until the chicken is cooked through.
  4. Once done, remove the chicken and whisk in the cornstarch mixed with 1 tablespoon of water to thicken the sauce.
  5. Return the chicken to the slow cooker and coat with the sauce.
