- 4 boneless, skinless chicken breasts
- 1 cup Marsala wine
- 1/2 cup chicken broth
- 8 ounces sliced mushrooms
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 teaspoons dried thyme
Instructions
- In a skillet, heat olive oil over medium heat. Sear the chicken on both sides until golden brown, about 3-4 minutes per side.
- Place the chicken in the slow cooker.
- In the same skillet, add onions and cook until translucent, then add garlic and mushrooms and cook for an additional 2-3 minutes.
- Pour the Marsala wine and chicken broth into the skillet, scraping up any brown bits, then pour this mixture over the chicken in the slow cooker.
- Add salt, black pepper, and thyme. Cover and cook on low for 6-8 hours or on high for 3-4 hours.
- Once cooked, shred the chicken gently and stir it back into the sauce before serving.
Notes
- Serve with pasta or mashed potatoes for a complete meal.
- Leftovers can be reheated in the microwave or on the stovetop.
