Ingredients

  • 4 lamb shanks
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 4 garlic cloves, minced
  • 2 cups beef broth
  • 1 cup red wine
  • 2 tablespoons tomato paste
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped
  • Salt and pepper to taste


Instructions

  1. Heat the olive oil in a large pan over medium-high heat. Season the lamb shanks with salt and pepper, then brown them in the oil on all sides.
  2. Remove the shanks and add the onion and garlic to the pan, sautéing until the onion is translucent.
  3. Stir in the beef broth, red wine, tomato paste, rosemary, and thyme. Bring to a simmer.
  4. Add the lamb shanks back into the pan, ensuring they are submerged in the liquid.
  5. Cover and transfer to a slow cooker, cooking on low for 6-8 hours, or until the meat is tender.
  6. Once cooked, remove the shanks and reduce the liquid in the pan over medium heat until it thickens, then serve over the lamb.
