- 4 lamb shanks
- 2 tablespoons olive oil
- 1 onion, chopped
- 4 garlic cloves, minced
- 2 cups beef broth
- 1 cup red wine
- 2 tablespoons tomato paste
- 1 tablespoon fresh rosemary, chopped
- 1 tablespoon fresh thyme, chopped
- Salt and pepper to taste
Instructions
- Heat the olive oil in a large pan over medium-high heat. Season the lamb shanks with salt and pepper, then brown them in the oil on all sides.
- Remove the shanks and add the onion and garlic to the pan, sautéing until the onion is translucent.
- Stir in the beef broth, red wine, tomato paste, rosemary, and thyme. Bring to a simmer.
- Add the lamb shanks back into the pan, ensuring they are submerged in the liquid.
- Cover and transfer to a slow cooker, cooking on low for 6-8 hours, or until the meat is tender.
- Once cooked, remove the shanks and reduce the liquid in the pan over medium heat until it thickens, then serve over the lamb.
