- 4 lamb shanks
- 2 tablespoons olive oil
- 1 onion, chopped
- 4 cloves garlic, minced
- 2 cups beef broth

- 2 teaspoons dried thyme
- 2 teaspoons dried rosemary
- salt and pepper to taste
Instructions
- Heat olive oil in a large skillet over medium-high heat.
- Season the lamb shanks with salt and pepper, then brown them in the skillet for 4-5 minutes on each side.
- Transfer the lamb shanks to a slow cooker.
- Add chopped onion and minced garlic to the skillet, sauté for 2-3 minutes.
- Stir in beef broth, red wine, tomato paste, Worcestershire sauce, thyme, and rosemary.
- Pour the mixture over the lamb shanks in the slow cooker.
- Cover and cook on low for 6-8 hours or until the meat is tender.
- Remove the shanks and skim any fat from the gravy before serving.
