Ingredients

  • 4 lamb shanks
  • 2 tablespoons olive oil
  • 1 onion, chopped

  • 2 cups beef broth
  • 1 cup red wine
  • 2 tablespoons tomato paste
  • 1 tablespoon Worcestershire sauce
  • 2 teaspoons dried thyme
  • 2 teaspoons dried rosemary
  • salt and pepper to taste


Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Season the lamb shanks with salt and pepper, then brown them in the skillet for 4-5 minutes on each side.
  3. Transfer the lamb shanks to a slow cooker.
  4. Add chopped onion and minced garlic to the skillet, sauté for 2-3 minutes.
  5. Stir in beef broth, red wine, tomato paste, Worcestershire sauce, thyme, and rosemary.
  6. Pour the mixture over the lamb shanks in the slow cooker.
  7. Cover and cook on low for 6-8 hours or until the meat is tender.
  8. Remove the shanks and skim any fat from the gravy before serving.
