Ingredients

  • 4 lamb shanks
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 2 cups chicken broth
  • 1 cup red wine
  • 2 carrots, chopped
  • 2 sprigs fresh rosemary
  • 3 sprigs fresh thyme
  • 1 pound potatoes, quartered
  • Salt and pepper to taste


Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Brown the lamb shanks on all sides.
  2. Transfer the lamb shanks to a slow cooker.
  3. Add onion, garlic, chicken broth, red wine, and carrots to the slow cooker.
  4. Season with salt, pepper, rosemary, and thyme.
  5. Cook on low for 6-8 hours or until lamb is tender.
  6. In the last hour, add quartered potatoes.
  7. Serve hot, garnished with additional herbs if desired.
