- 4 lamb shanks

- 1 onion, chopped

- 1 pound potatoes, quartered
- Salt and pepper to taste
Instructions
- Heat olive oil in a large skillet over medium-high heat. Brown the lamb shanks on all sides.
- Transfer the lamb shanks to a slow cooker.
- Add onion, garlic, chicken broth, red wine, and carrots to the slow cooker.
- Season with salt, pepper, rosemary, and thyme.
- Cook on low for 6-8 hours or until lamb is tender.
- In the last hour, add quartered potatoes.
- Serve hot, garnished with additional herbs if desired.
