- 4 lamb shanks
- 2 tablespoons olive oil
- 1 onion, chopped
- 3 garlic cloves, minced
- 2 cups beef broth
- 1 cup red wine
- 2 tablespoons tomato paste
- 1 teaspoon dried rosemary
- 1 teaspoon dried thyme
- Salt and pepper to taste
Instructions
- In a large skillet, heat olive oil over medium heat. Sear lamb shanks until browned on all sides.
- Remove shanks and set aside. In the same skillet, add onion and garlic and sauté until translucent.
- Add beef broth, red wine, and tomato paste. Stir in rosemary and thyme.
- Place lamb shanks back in the skillet, cover, and simmer for 2-3 hours until tender.
- Serve with herb-infused gravy poured over the shanks.

- For extra flavor, marinate the lamb shanks in red wine and herbs overnight.
