Ingredients

  • 4 lamb shanks
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 2 cups beef broth
  • 1 cup red wine
  • 2 tablespoons tomato paste
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried thyme
  • Salt and pepper to taste


Instructions

  1. In a large skillet, heat olive oil over medium heat. Sear lamb shanks until browned on all sides.
  2. Remove shanks and set aside. In the same skillet, add onion and garlic and sauté until translucent.
  3. Add beef broth, red wine, and tomato paste. Stir in rosemary and thyme.
  4. Place lamb shanks back in the skillet, cover, and simmer for 2-3 hours until tender.
  5. Serve with herb-infused gravy poured over the shanks.
