Ingredients

  • 4 lamb shanks
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 onion, chopped
  • 4 garlic cloves, minced
  • 2 cups beef broth
  • 1 cup red wine
  • 2 tablespoons tomato paste
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped
  • 1 pound potatoes, cut into chunks


Instructions

  1. Preheat the oven to 325°F (163°C).
  2. Season the lamb shanks with salt and pepper.
  3. In a large skillet, heat olive oil over medium heat and brown the lamb shanks on all sides.
  4. Remove the shanks and set aside. In the same skillet, add onion and garlic, and sauté until softened.
  5. Add the beef broth, red wine, tomato paste, rosemary, and thyme to the skillet.
  6. Return the lamb shanks to the skillet and ensure they are submerged in the liquid.
  7. Cover the skillet and transfer it to the oven. Cook for 3 hours.
  8. In the last 30 minutes, add the potatoes to the skillet to roast.
  9. Serve warm with the sauce drizzled over the lamb shanks and potatoes.
