- 4 lamb shanks
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 onion, chopped
- 4 garlic cloves, minced
- 2 cups beef broth
- 1 cup red wine
- 2 tablespoons tomato paste
- 1 tablespoon fresh rosemary, chopped
- 1 tablespoon fresh thyme, chopped
- 1 pound potatoes, cut into chunks
Instructions
- Preheat the oven to 325°F (163°C).
- Season the lamb shanks with salt and pepper.
- In a large skillet, heat olive oil over medium heat and brown the lamb shanks on all sides.
- Remove the shanks and set aside. In the same skillet, add onion and garlic, and sauté until softened.
- Add the beef broth, red wine, tomato paste, rosemary, and thyme to the skillet.
- Return the lamb shanks to the skillet and ensure they are submerged in the liquid.
- Cover the skillet and transfer it to the oven. Cook for 3 hours.
- In the last 30 minutes, add the potatoes to the skillet to roast.
- Serve warm with the sauce drizzled over the lamb shanks and potatoes.
