Ingredients

  • 4 chicken thighs
  • 1 tablespoon olive oil
  • 1 medium onion, sliced
  • 2 cloves garlic, minced
  • 1 red bell pepper, sliced
  • 1 cup cherry tomatoes
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon red pepper flakes
  • 1/2 cup chicken broth
  • 2 tablespoons parsley, chopped


Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Add the chicken thighs and brown on both sides.
  3. Remove chicken and set aside.
  4. In the same skillet, add onion and garlic, sauté until soft.
  5. Add red bell pepper and cherry tomatoes, stir well.
  6. Sprinkle oregano, basil, and red pepper flakes.
  7. Return chicken to the skillet, pour chicken broth over the top.
  8. Cover and simmer for 20-25 minutes until chicken is cooked through.
  9. Garnish with parsley before serving.
