- 4 chicken thighs
- 1 tablespoon olive oil
- 1 medium onion, sliced
- 2 cloves garlic, minced
- 1 red bell pepper, sliced
- 1 cup cherry tomatoes
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/2 teaspoon red pepper flakes
- 1/2 cup chicken broth
- 2 tablespoons parsley, chopped
Instructions
- Heat olive oil in a skillet over medium heat.
- Add the chicken thighs and brown on both sides.
- Remove chicken and set aside.
- In the same skillet, add onion and garlic, sauté until soft.
- Add red bell pepper and cherry tomatoes, stir well.
- Sprinkle oregano, basil, and red pepper flakes.
- Return chicken to the skillet, pour chicken broth over the top.
- Cover and simmer for 20-25 minutes until chicken is cooked through.
- Garnish with parsley before serving.
