- 1 pound fresh shrimp, peeled and deveined
- 1 cup lime juice
- 1 medium red onion, finely chopped
- 1 cucumber, diced
- 2 medium tomatoes, diced
- 1 jalapeño, finely chopped
- 1/2 cup fresh cilantro, chopped
- Salt to taste
Instructions
- Start by cooking the shrimp in boiling water for 2-3 minutes until they turn pink. Drain and rinse under cold water.
- In a bowl, combine the cooked shrimp and lime juice. Stir well and let it marinate for 30 minutes.
- Add in the chopped red onion, cucumber, tomatoes, jalapeño, and cilantro. Mix until well combined.
- Season with salt to taste. Serve chilled.
Notes
- Adjust the spiciness by adding more or less jalapeño.
- It’s best enjoyed fresh but can be stored in the fridge for up to 2 days.
