Description

This Shrimp Ceviche Delight is a refreshing dish perfect for hot summer days. It’s easy to prepare and packed with flavor!


Ingredients

  • 1 pound fresh shrimp, peeled and deveined
  • 1 cup lime juice
  • 1 medium red onion, finely chopped
  • 1 cucumber, diced
  • 2 medium tomatoes, diced
  • 1 jalapeño, finely chopped
  • 1/2 cup fresh cilantro, chopped
  • Salt to taste


Instructions

  1. Start by cooking the shrimp in boiling water for 2-3 minutes until they turn pink. Drain and rinse under cold water.
  2. In a bowl, combine the cooked shrimp and lime juice. Stir well and let it marinate for 30 minutes.
  3. Add in the chopped red onion, cucumber, tomatoes, jalapeño, and cilantro. Mix until well combined.
  4. Season with salt to taste. Serve chilled.

Notes

  • Adjust the spiciness by adding more or less jalapeño.
  • It’s best enjoyed fresh but can be stored in the fridge for up to 2 days.
