Description

These Shrimp and Spinach Stuffed Pasta Rolls are a delightful dish that combines the flavors of succulent shrimp and fresh spinach, wrapped in tender pasta and baked to perfection.


Ingredients

  • 12 jumbo pasta shells
  • 1 pound shrimp, peeled and deveined
  • 2 cups fresh spinach, chopped
  • 1 cup ricotta cheese
  • 1 cup mozzarella cheese, shredded
  • 1/2 cup Parmesan cheese, grated
  • 2 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 jar marinara sauce


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Cook the jumbo pasta shells according to package instructions; drain and set aside.
  3. In a skillet, sauté garlic in olive oil, then add shrimp and spinach until shrimp are cooked through.
  4. In a bowl, mix shrimp and spinach with ricotta, 1/2 cup mozzarella, Parmesan, salt, and pepper.
  5. Stuff each pasta shell with the mixture and place in a baking dish.
  6. Pour marinara sauce over the shells and top with remaining mozzarella.
  7. Bake for 25-30 minutes until bubbly and golden.
