- 1 pound large shrimp, peeled and deveined
- 2 ripe avocados, diced
- 1 cup mango, diced
- 1 small red onion, finely chopped
- 1 jalapeño, minced
- 1/4 cup fresh cilantro, chopped
- 1 lime, juiced
- 2 tablespoons olive oil
- 1 teaspoon chili powder
- Salt to taste
Instructions
- In a mixing bowl, combine the diced mango, red onion, jalapeño, cilantro, and lime juice to make the mango salsa. Set aside.
- In a separate bowl, marinate the shrimp with olive oil, chili powder, and salt. Let it sit for 15 minutes.
- Heat a grill or skillet over medium-high heat. Cook the shrimp for 2-3 minutes on each side until they are pink and cooked through.
- Assemble the bowls by placing the diced avocados at the bottom, followed by the grilled shrimp and a generous scoop of mango salsa on top.
- Drizzle with additional lime juice if desired and serve immediately.
Notes
- For extra heat, leave the seeds in the jalapeño.
- Can substitute shrimp with chicken or tofu for a different protein.
