Description
A delightful dish featuring perfectly seared cod topped with fresh tomato basil sauce.
Ingredients

- 4 pieces cod fillets
- 2 tablespoons olive oil
- 1 cup cherry tomatoes, halved
- 2 cloves garlic, minced
- 1/4 cup fresh basil, chopped
- Salt to taste
- Black pepper to taste
Instructions
- Heat olive oil in a pan over medium heat.
- Season cod fillets with salt and pepper.
- Place cod in the pan and sear for about 4-5 minutes on each side, or until golden brown.
- Remove cod and set aside.
- In the same pan, add garlic and sauté for 30 seconds.
- Add cherry tomatoes and cook until softened, about 3-4 minutes.
- Stir in fresh basil and return cod to the pan.
- Allow to cook for an additional 2 minutes.
- Serve immediately, garnished with additional basil if desired.

- Pair with a side salad for a complete meal.
- Can substitute cod with any white fish.
