Description

A delightful dish featuring perfectly seared cod topped with fresh tomato basil sauce.


Ingredients

Scale
  • 4 pieces cod fillets
  • 2 tablespoons olive oil
  • 1 cup cherry tomatoes, halved
  • 2 cloves garlic, minced
  • 1/4 cup fresh basil, chopped
  • Salt to taste
  • Black pepper to taste


Instructions

  1. Heat olive oil in a pan over medium heat.
  2. Season cod fillets with salt and pepper.
  3. Place cod in the pan and sear for about 4-5 minutes on each side, or until golden brown.
  4. Remove cod and set aside.
  5. In the same pan, add garlic and sauté for 30 seconds.
  6. Add cherry tomatoes and cook until softened, about 3-4 minutes.
  7. Stir in fresh basil and return cod to the pan.
  8. Allow to cook for an additional 2 minutes.
  9. Serve immediately, garnished with additional basil if desired.
