- 2 cups mixed vegetables (zucchini, bell peppers, carrots)
- 1 can (15 oz) cannellini beans, drained and rinsed
- 2 tablespoons olive oil
- 1 teaspoon dried oregano
- 1 teaspoon garlic powder
- Salt and pepper to taste
- 1/2 cup grated Parmesan cheese (optional)
Instructions
- Preheat the oven to 400°F (200°C).
- In a large bowl, combine the mixed vegetables, cannellini beans, olive oil, oregano, garlic powder, salt, and pepper.
- Spread the mixture in a single layer on a baking sheet.
- Roast for 25-30 minutes, stirring halfway through, until the vegetables are tender.
- If using, sprinkle with Parmesan cheese and return to the oven for 5 more minutes.
- Remove from oven and serve warm.

- For added flavor, consider adding fresh herbs such as basil or thyme.
