Ingredients

  • 2 cups mixed vegetables (zucchini, bell peppers, carrots)
  • 1 can (15 oz) cannellini beans, drained and rinsed
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 1/2 cup grated Parmesan cheese (optional)


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, combine the mixed vegetables, cannellini beans, olive oil, oregano, garlic powder, salt, and pepper.
  3. Spread the mixture in a single layer on a baking sheet.
  4. Roast for 25-30 minutes, stirring halfway through, until the vegetables are tender.
  5. If using, sprinkle with Parmesan cheese and return to the oven for 5 more minutes.
  6. Remove from oven and serve warm.
