- 1 cup heavy cream
- 2 tablespoons butter

- 1 teaspoon thyme, dried
- 1 cup grated cheese (e.g., Gruyère or cheddar)
- 1/4 cup breadcrumbs
Instructions
- Preheat the oven to 375°F (190°C).
- In a large mixing bowl, combine the sweet potatoes, parsnips, and beets.
- In a separate bowl, whisk together the heavy cream, salt, pepper, and thyme.
- Layer half of the root vegetable mixture in a greased baking dish.
- Pour half of the cream mixture over the vegetables and sprinkle with half of the cheese.
- Repeat the layers with the remaining vegetables, cream, and cheese.
- Top with breadcrumbs and dot with butter.
- Bake for 45-50 minutes, or until the vegetables are tender and the top is golden brown.
