Ingredients

  • 2 cups sweet potatoes, peeled and sliced
  • 1 cup parsnips, peeled and sliced
  • 1 cup beets, peeled and sliced
  • 1 cup heavy cream
  • 2 tablespoons butter
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon thyme, dried
  • 1 cup grated cheese (e.g., Gruyère or cheddar)
  • 1/4 cup breadcrumbs


Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large mixing bowl, combine the sweet potatoes, parsnips, and beets.
  3. In a separate bowl, whisk together the heavy cream, salt, pepper, and thyme.
  4. Layer half of the root vegetable mixture in a greased baking dish.
  5. Pour half of the cream mixture over the vegetables and sprinkle with half of the cheese.
  6. Repeat the layers with the remaining vegetables, cream, and cheese.
  7. Top with breadcrumbs and dot with butter.
  8. Bake for 45-50 minutes, or until the vegetables are tender and the top is golden brown.
