- 4 boneless, skinless chicken breasts
- 1 cup roasted red peppers, chopped
- 1 cup fresh spinach, chopped
- 1 cup mozzarella cheese, shredded
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- In a bowl, combine roasted red peppers, spinach, and mozzarella cheese.
- Cut a pocket into each chicken breast and stuff with the mixture.
- Rub the outside of the chicken with olive oil, garlic powder, Italian seasoning, salt, and pepper.
- Place the stuffed chicken breasts in a baking dish and bake for 25-30 minutes until cooked through.
- Let rest for a few minutes before serving.
