Description

This Roasted Red Pepper, Spinach, and Mozzarella Stuffed Chicken is a delightful combination of flavors, perfect for a weeknight dinner or a special occasion.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup roasted red peppers, chopped
  • 1 cup fresh spinach, chopped
  • 1 cup mozzarella cheese, shredded
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste


Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, combine roasted red peppers, spinach, and mozzarella cheese.
  3. Cut a pocket into each chicken breast and stuff with the mixture.
  4. Rub the outside of the chicken with olive oil, garlic powder, Italian seasoning, salt, and pepper.
  5. Place the stuffed chicken breasts in a baking dish and bake for 25-30 minutes until cooked through.
  6. Let rest for a few minutes before serving.
