Instructions
- Preheat the oven to 400°F (200°C).
- In a large bowl, toss the carrot sticks with olive oil, salt, and black pepper.
- Spread the carrots out on a baking sheet in a single layer.
- Roast in the oven for about 25-30 minutes, until tender and slightly caramelized.
- While the carrots are roasting, whip the ricotta until creamy.
- Once the carrots are done, serve them on a plate topped with whipped ricotta and drizzled with hot honey and red pepper flakes.
