Instructions
- Preheat the oven to 400°F (200°C).
- In a large bowl, toss the butternut squash with olive oil, salt, pepper, and maple syrup if using.
- Spread the squash on a baking sheet in a single layer.
- Roast in the preheated oven for 25-30 minutes, or until tender and slightly caramelized.
- Add the cranberries to the baking sheet during the last 10 minutes of roasting.
